Roasting garlic low and slow transforms its sharp, pungent bite into something deeply sweet and mellow — and that gentler flavor profile is exactly what makes this puree so easy on a sensitive digestive system. Whole heads go into the oven until every clove is golden and completely soft, which breaks down the compounds that can cause discomfort when garlic is eaten raw. The reduced pomegranate juice brings a bright, fruity tang, while fresh mint and a squeeze of lemon keep things lively without relying on anything processed or hard to digest. Ground cumin and turmeric round out the flavor with warm, earthy depth — both long celebrated for their gut-supportive properties. Everything comes together in a blender into a thick, silky spread that's as versatile as it is beautiful, working equally well as a dip, a sandwich smear, or a base for roasted vegetables. The optional pomegranate molasses adds a sticky-sweet finish that makes the whole thing feel a little indulgent, even though every ingredient is clean and straightforward.

Preheat the oven to 400°F (205°C). Place the trimmed garlic heads cut-side up in a small baking dish. Drizzle 1 tbsp of the olive oil over the exposed cloves, then cover the dish tightly with aluminum foil.
Roast the garlic for 40–45 minutes, until the cloves are deeply golden, completely soft, and a skewer slides through the center of the largest clove without resistance. Remove from the oven and let rest, still covered, for 10 minutes.
