Roasting garlic low and slow transforms it into something almost unrecognizable — deeply golden, buttery soft, and sweet without a trace of sharpness. That natural sweetness pairs beautifully here with pomegranate juice that's been simmered down into a concentrated, lightly tangy syrup, keeping the overall fructose load far more manageable than you'd expect from a fruit-forward recipe. Fresh mint and a squeeze of lemon lift the whole thing, while cumin and turmeric add a warm, earthy backbone that makes this puree feel genuinely complex. Everything comes together in a blender in under a minute, landing you with a thick, velvety spread that holds its shape on a spoon but glides effortlessly onto whatever you're serving it with. It works as a dip, a sandwich spread, or a sauce alongside roasted vegetables and grilled proteins — basically anywhere you'd reach for a bold, aromatic condiment. The optional pomegranate molasses deepens the flavor even further if you're feeling it, but the puree is absolutely complete without it.

Preheat the oven to 400°F (205°C). Place the trimmed garlic heads cut-side up in a small baking dish. Drizzle 1 tbsp of the olive oil over the exposed cloves, then cover the dish tightly with aluminum foil.
Roast the garlic for 40–45 minutes, until the cloves are deeply golden, completely soft, and a skewer slides through the center of the largest clove without resistance. Remove from the oven and let rest, still covered, for 10 minutes.
