Roasting garlic low and slow transforms it into something almost unrecognizable — deeply golden, buttery-soft, and sweet in a way that raw cloves never hint at. Here, those caramelized cloves get blended with reduced pomegranate juice, fresh mint, lemon, cumin, and turmeric into a vibrant, jewel-toned puree that tastes far more complex than its ingredient list suggests. The pomegranate juice is simmered down until slightly syrupy before it hits the blender, which concentrates its tartness and gives the finished spread a gorgeous depth. Every ingredient here is whole and straightforward — olive oil, citrus, spices, fresh herbs — so there's nothing hidden to worry about, no stabilizers, no additives, just real food doing all the work. The optional pomegranate molasses nudges the flavor into even richer territory if you have it on hand. Thick enough to mound on a spoon but still easy to spread, this puree works beautifully on flatbread, alongside roasted vegetables, or as a dip for whatever you're snacking on. It's the kind of condiment that quietly becomes the most talked-about thing on the table.

Preheat the oven to 400°F (205°C). Place the trimmed garlic heads cut-side up in a small baking dish. Drizzle 1 tbsp of the olive oil over the exposed cloves, then cover the dish tightly with aluminum foil.
Roast the garlic for 40–45 minutes, until the cloves are deeply golden, completely soft, and a skewer slides through the center of the largest clove without resistance. Remove from the oven and let rest, still covered, for 10 minutes.
