Roasting whole heads of garlic low and slow transforms sharp, pungent cloves into something almost buttery and sweet — and that caramelized depth is the backbone of this vibrant puree. The pomegranate juice gets simmered down into a lightly syrupy reduction before it hits the blender, concentrating its tangy-sweet flavor so every bite has real complexity. Fresh mint and a squeeze of lemon keep things bright, while cumin and turmeric add a warm, earthy undertone that makes this feel like so much more than a simple spread. A drizzle of pomegranate molasses at the end is optional, but if you have it on hand, it rounds out the flavor beautifully. The whole thing comes together without a single egg in sight — no binders, no emulsifiers, just whole ingredients blending into a naturally creamy, luscious texture. Serve it as a dip with warm flatbread, swipe it across a grain bowl, or use it as a sandwich spread that will make everyone ask what your secret is.

Preheat the oven to 400°F (205°C). Place the trimmed garlic heads cut-side up in a small baking dish. Drizzle 1 tbsp of the olive oil over the exposed cloves, then cover the dish tightly with aluminum foil.
Roast the garlic for 40–45 minutes, until the cloves are deeply golden, completely soft, and a skewer slides through the center of the largest clove without resistance. Remove from the oven and let rest, still covered, for 10 minutes.
