Roasting whole heads of garlic low and slow transforms sharp, pungent cloves into something almost buttery and deeply sweet — and this puree takes that magic even further. The pomegranate juice gets simmered down into a lightly syrupy reduction before it hits the blender, concentrating that tart, jewel-bright flavor so it can hold its own against the mellow roasted garlic. Fresh mint and a squeeze of lemon keep everything bright and alive, while cumin and turmeric add a warm, earthy undercurrent that makes the whole thing feel surprisingly complex. A spoonful of pomegranate molasses stirred in at the end is optional, but it deepens the flavor in a way that's hard to describe and even harder to resist. The finished puree is thick enough to mound on a spoon yet still silky and spreadable — perfect slathered on flatbread, dolloped alongside roasted vegetables, or used as a dip for a grazing board. Every single ingredient here is plant-based and naturally free from poultry in any form, so there's no label-reading or substitution stress involved. This is the kind of recipe that looks and tastes like you put in serious effort, but the oven and blender do most of the work for you.

Preheat the oven to 400°F (205°C). Place the trimmed garlic heads cut-side up in a small baking dish. Drizzle 1 tbsp of the olive oil over the exposed cloves, then cover the dish tightly with aluminum foil.
Roast the garlic for 40–45 minutes, until the cloves are deeply golden, completely soft, and a skewer slides through the center of the largest clove without resistance. Remove from the oven and let rest, still covered, for 10 minutes.
