Roasting garlic low and slow transforms it into something almost unrecognizable — sweet, buttery, and deeply savory — and this puree takes that magic even further with pomegranate juice, fresh mint, and warm spices. The pomegranate juice gets simmered down into a lightly syrupy reduction before it hits the blender, which concentrates that tart, fruity depth and keeps the final texture thick and spreadable rather than watery. A pinch of cumin and turmeric round out the flavor with just enough earthiness to make this feel complex without being fussy. Every single ingredient here is straightforward and naturally tree-nut-free, so there's no need to scrutinize labels or worry about cross-contact from nut-based thickeners or blended spreads from the store. The optional pomegranate molasses is a small addition that punches way above its weight, adding a glossy richness that makes the whole thing feel almost restaurant-worthy. Spread it on flatbread, swipe it under roasted vegetables, or use it as a dip — it holds its own in just about any role you give it.

Preheat the oven to 400°F (205°C). Place the trimmed garlic heads cut-side up in a small baking dish. Drizzle 1 tbsp of the olive oil over the exposed cloves, then cover the dish tightly with aluminum foil.
Roast the garlic for 40–45 minutes, until the cloves are deeply golden, completely soft, and a skewer slides through the center of the largest clove without resistance. Remove from the oven and let rest, still covered, for 10 minutes.
