Roasting garlic low and slow transforms it into something almost unrecognizable — deeply golden, buttery-soft, and sweet in a way that raw cloves never hint at. Here, those caramelized cloves get blended with reduced pomegranate juice, bright fresh mint, lemon, cumin, and turmeric into a silky, jewel-toned puree that feels genuinely special. The pomegranate juice is simmered down until slightly syrupy before it hits the blender, which concentrates the flavor and gives the finished spread a gorgeous depth without any added thickeners or stabilizers. That matters because carrageenan — a common additive used to improve texture in commercial dips, spreads, and dairy alternatives — has no place here; every bit of body in this puree comes from the garlic itself and the reduction process. A touch of pomegranate molasses is optional but absolutely worth it if you want an extra layer of tangy-sweet complexity. Spread it on flatbread, swipe it under roasted vegetables, or use it as a dip — it's versatile enough to show up at almost any meal. Clean ingredients, zero shortcuts, and a flavor payoff that will make you wonder why you ever reached for a store-bought spread.

Preheat the oven to 400°F (205°C). Place the trimmed garlic heads cut-side up in a small baking dish. Drizzle 1 tbsp of the olive oil over the exposed cloves, then cover the dish tightly with aluminum foil.
Roast the garlic for 40–45 minutes, until the cloves are deeply golden, completely soft, and a skewer slides through the center of the largest clove without resistance. Remove from the oven and let rest, still covered, for 10 minutes.
