Roasting garlic low and slow transforms it into something almost unrecognizable — sweet, buttery, and deeply mellow — and this puree takes that magic even further with bold, unexpected flavors. Pomegranate juice gets simmered down into a lightly syrupy reduction before it hits the blender, giving the finished spread a fruity tartness that plays beautifully against the caramelized garlic. Fresh mint and a squeeze of lemon keep everything bright, while cumin and turmeric add just enough warmth and earthiness to make it feel complex without being fussy. The optional pomegranate molasses is worth tracking down if you can find it — it deepens the whole thing into something genuinely special. This is the kind of spread that disappears fast at a table, whether you're swiping it onto flatbread, dolloping it alongside roasted vegetables, or using it as a dip for whatever you have on hand. Every single ingredient here is plant-based and naturally free from any meat, so there's zero guesswork about what's in it — just wholesome, vibrant pantry staples blended into something that tastes far more impressive than the effort involved.

Preheat the oven to 400°F (205°C). Place the trimmed garlic heads cut-side up in a small baking dish. Drizzle 1 tbsp of the olive oil over the exposed cloves, then cover the dish tightly with aluminum foil.
Roast the garlic for 40–45 minutes, until the cloves are deeply golden, completely soft, and a skewer slides through the center of the largest clove without resistance. Remove from the oven and let rest, still covered, for 10 minutes.
