Slow-roasting garlic until the cloves turn deeply golden and meltingly soft is one of those kitchen moves that transforms a humble ingredient into something almost luxurious, and this puree takes that foundation somewhere genuinely exciting. Pomegranate juice gets simmered down into a concentrated, lightly syrupy reduction before it hits the blender, layering in a bright tartness that balances the rich, caramelized garlic beautifully. Fresh mint and a squeeze of lemon keep everything lively, while cumin and turmeric add warm, earthy depth — and turmeric in particular is a cornerstone of cooking that prioritizes reducing everyday inflammation. Extra virgin olive oil ties it all together with healthy fats that support that same goal, so every ingredient here is genuinely pulling its weight. The result is a thick, spreadable puree that works as a dip, a sandwich spread, a sauce base, or a dramatic addition to a mezze board — and it makes six generous servings, so it's worth every minute of the roasting time. Optional pomegranate molasses deepens the sweet-tart complexity even further if you want to lean into that flavor. This is the kind of recipe that looks and tastes far more impressive than the effort involved.

Preheat the oven to 400°F (205°C). Place the trimmed garlic heads cut-side up in a small baking dish. Drizzle 1 tbsp of the olive oil over the exposed cloves, then cover the dish tightly with aluminum foil.
Roast the garlic for 40–45 minutes, until the cloves are deeply golden, completely soft, and a skewer slides through the center of the largest clove without resistance. Remove from the oven and let rest, still covered, for 10 minutes.
