Heat 2 tbsp of the olive oil in a 12-inch skillet over medium-high heat until shimmering. Add the cauliflower florets in a single layer and cook, undisturbed, for 4 minutes, until the undersides are golden. Stir and continue cooking for another 3–4 minutes, until the florets are golden on most sides and just tender at the edges. Transfer to a plate and set aside.
Reduce the heat to medium and add the remaining 1 tbsp olive oil to the skillet. Add the onion and cook, stirring occasionally, until softened and translucent, about 5–6 minutes.
