Bright, jewel-toned, and bursting with contrasting textures, this quinoa salad is the kind of dish that looks like it took serious effort but comes together with surprisingly little fuss. Quinoa is a naturally gluten-free grain alternative that makes a perfect base for anyone avoiding wheat, delivering a satisfying, slightly nutty bite without any of the worry that comes with couscous or bulgur-based salads. Juicy mango and ruby-red pomegranate arils bring sweetness and pop, while torn fresh mint lifts the whole bowl with an herby brightness that keeps every forkful feeling fresh. The honey-lime dressing, warmed up with turmeric and ginger, ties everything together in a way that feels almost tropical — tangy, a little floral, and just complex enough to be interesting. Crunchy raw pumpkin seeds add a final layer of texture and make the salad feel genuinely hearty rather than just a side dish. It's the kind of recipe you'll want to bring to a potluck or meal-prep on a Sunday, because it holds up beautifully and only gets better as the dressing soaks in.

Combine the rinsed quinoa, water, and 1/4 tsp salt in a medium saucepan and bring to a boil over high heat. Reduce the heat to low, cover, and cook until the quinoa has absorbed all the water and the germ rings are visible, about 13–15 minutes.
Remove the saucepan from the heat and let the quinoa steam, covered, for 5 minutes. Uncover, fluff with a fork, and spread onto a large plate or sheet pan to cool for at least 10 minutes until no longer steaming.
