Bright, jewel-toned, and bursting with fresh flavor, this quinoa salad is the kind of dish that feels like a treat while quietly doing a lot of nutritional heavy lifting. Quinoa brings complete protein and folate to the table, mango and pomegranate arils deliver a hit of vitamin C, and pumpkin seeds add a satisfying crunch along with iron and healthy fats — all nutrients that matter especially during pregnancy. The turmeric-ginger dressing is gentle and warming without being overpowering, and using only the green tops of scallions keeps the flavor mild and easy on a sensitive stomach. Everything is tossed together once the quinoa has fully cooled, so there's no risk of wilting the fresh mint or accidentally serving anything warm when cold food is more appealing. The lime-honey dressing comes together in minutes and ties the whole bowl together with a bright, citrusy finish that makes each bite feel refreshing. It's naturally free from anything processed or questionable, built entirely from whole, recognizable ingredients you can feel good about. Whether you're eating for energy, managing cravings, or just want something beautiful on your plate, this salad genuinely delivers.

Combine the rinsed quinoa, water, and 1/4 tsp salt in a medium saucepan and bring to a boil over high heat. Reduce the heat to low, cover, and cook until the quinoa has absorbed all the water and the germ rings are visible, about 13–15 minutes.
Remove the saucepan from the heat and let the quinoa steam, covered, for 5 minutes. Uncover, fluff with a fork, and spread onto a large plate or sheet pan to cool for at least 10 minutes until no longer steaming.
