Flaky white cod gets a seriously unexpected upgrade here, wrapped in a golden crust made entirely from baked and pulsed green plantains. The crust is seasoned with turmeric, ginger, fresh thyme, parsley, and coconut aminos, giving every bite a warm, herby depth that feels far more complex than the ingredient list suggests. Because the whole recipe leans on coconut oil, coconut aminos, and fresh produce, there's no need to scan labels for hidden red meat derivatives or worry about cross-contact from shared marinades and sauces. The technique is clever — the plantain rounds are dried out in the oven first, then pulsed to a coarse, panko-like crumb that actually crisps up beautifully when seared in a hot skillet. That initial crust-side sear locks in the texture before the skillet goes straight into the oven to finish the fish through gently. The result is a fillet that's crispy on the outside, tender and opaque all the way through, and impressive enough to serve to guests without a word of explanation. A squeeze of lemon over the top right before eating pulls everything together perfectly.

Preheat the oven to 400°F (205°C). Set a wire rack over a baking sheet and set aside.
Spread the plantain rounds in a single layer on the prepared baking sheet (without the rack) and bake for 12–15 minutes, flipping once halfway through, until dried out, firm, and lightly golden at the edges. Remove from the oven and let cool for 5 minutes.
