Flaky cod gets a seriously unexpected upgrade here, with a golden crust made entirely from baked and pulsed green plantains seasoned with turmeric, ginger, fresh thyme, and coconut aminos. The result is something that looks and eats like a panko-crusted fillet but is completely free of dairy — no butter, no cream, no hidden milk solids anywhere in the ingredient list. Coconut oil does all the heavy lifting for richness, both in the crust and in the searing step, giving you that satisfying crunch without any compromise. The technique of baking the plantain rounds first before processing them is what makes the crust work — it drives out moisture so the crumbs stay crisp through the sear and the oven finish. Pressing the crust firmly onto the presentation side of each fillet and searing it face-down first locks everything in place, so you get a beautiful golden top every time. A squeeze of lemon and a scatter of fresh parsley at the end keeps things bright and clean. It's an impressive weeknight dinner that happens to be naturally free of anything dairy-derived, with zero substitutions required.

Preheat the oven to 400°F (205°C). Set a wire rack over a baking sheet and set aside.
Spread the plantain rounds in a single layer on the prepared baking sheet (without the rack) and bake for 12–15 minutes, flipping once halfway through, until dried out, firm, and lightly golden at the edges. Remove from the oven and let cool for 5 minutes.
