Brewing your own kombucha at home is one of those deeply satisfying kitchen projects that rewards patience with something genuinely delicious. The process is beautifully simple — just black tea, sugar, water, and a living SCOBY working together over the course of a week or two to transform a sweet brew into something tangy, lightly fizzy, and refreshing. Because the ingredient list is so clean and straightforward, there's no need to scrutinize labels or worry about hidden additives the way you might with store-bought bottles. The SCOBY does all the heavy lifting, consuming most of the sugar during fermentation so the finished drink carries that characteristic tartness without being overly sweet. Tasting daily from day seven onward lets you dial in exactly the flavor you want — a gentle tang for everyday sipping or a sharper, more vinegary profile if you let it ride longer. Saving your SCOBY and a half cup of finished kombucha means each batch essentially seeds the next, so once you're in the rhythm, you'll have a steady supply on hand. It's a genuinely rewarding ritual, and the result tastes far livelier than anything sitting on a grocery store shelf.

Bring 1 quart of the filtered water to a boil in a large pot. Remove from heat, add the tea bags (or loose-leaf tea in a strainer), and steep for 5–7 minutes, until the tea is deep amber and strongly brewed. Remove and discard the tea bags or strainer.
Add the sugar to the hot tea and stir with a long-handled spoon until fully dissolved, about 1 minute.
