Brewing your own kombucha at home is one of those deeply satisfying kitchen projects that rewards patience with something genuinely delicious — tangy, lightly fizzy, and alive in the best possible way. Many store-bought kombuchas sneak in added flavors, spices, or botanicals that can make label-reading a real chore, but this recipe keeps things beautifully stripped back with nothing but black tea, sugar, water, a SCOBY, and starter liquid. The process is straightforward: brew a strong sweet tea, let it cool completely so the SCOBY stays healthy, then let time and fermentation do the heavy lifting. That cooling step is genuinely important — rushing it can stress the culture and throw off your whole batch, so it's worth waiting until the tea hits room temperature before you add anything living to the jar. From day seven onward, tasting daily is the fun part, because you get to decide exactly how tart and effervescent you want the final result to be. The plain profile here means you end up with a clean, versatile base that's great on its own over ice or used as a jumping-off point for a second ferment with your own chosen add-ins. Once you've got your rhythm down, you'll always have starter liquid ready and a new batch perpetually in the works.

Bring 1 quart of the filtered water to a boil in a large pot. Remove from heat, add the tea bags (or loose-leaf tea in a strainer), and steep for 5–7 minutes, until the tea is deep amber and strongly brewed. Remove and discard the tea bags or strainer.
Add the sugar to the hot tea and stir with a long-handled spoon until fully dissolved, about 1 minute.
