Brewing your own kombucha at home is one of those deeply satisfying kitchen projects that rewards patience with something genuinely delicious. The process starts with a strong, dark brew of black tea sweetened with plain white sugar — that sugar feeds the SCOBY over the course of a week or more, gradually transforming the liquid into something tangy, lightly fizzy, and refreshingly complex. Watching the fermentation unfold day by day, tasting it as it shifts from sweet to pleasantly tart, makes the finished product feel like a real achievement. Because the entire ingredient list is plant-based and built around tea, water, sugar, and a live culture, there's nothing here that raises any concern about animal-derived proteins — it's naturally free of poultry in any form. Store-bought versions can sometimes carry vague labeling or added flavorings, so making it from scratch gives you complete visibility into exactly what's going in the jar. The result is a clean, bright, probiotic-rich drink you can bottle up and enjoy for weeks, and once you've saved your SCOBY and starter liquid, the next batch is even easier to get going.

Bring 1 quart of the filtered water to a boil in a large pot. Remove from heat, add the tea bags (or loose-leaf tea in a strainer), and steep for 5–7 minutes, until the tea is deep amber and strongly brewed. Remove and discard the tea bags or strainer.
Add the sugar to the hot tea and stir with a long-handled spoon until fully dissolved, about 1 minute.
