Brewing your own kombucha at home is one of those deeply satisfying kitchen projects that rewards patience with something genuinely delicious. The process starts with a strong, dark brew of black tea sweetened with plain white sugar ā that sugar feeds the SCOBY over the course of a week or more, transforming the liquid into something tangy, lightly fizzy, and refreshingly complex. Watching a new SCOBY layer form on top of the old one never gets old, and the smell shifting from sweet tea to something pleasantly sour is a real signal that fermentation is doing its thing. The ingredients here are beautifully straightforward ā tea, sugar, water, and a live culture ā so there's nothing hidden to worry about, no nut-derived additives or cross-contamination concerns that can sneak into store-bought versions. Tasting daily from day seven lets you dial in exactly how tart you like it, whether that's bright and mildly sweet or deeply sour and vinegary after a longer ferment. Once you bottle your first batch and pop one open over the sink to catch that satisfying little hiss of carbonation, you'll understand why home brewers keep a jar going on the counter indefinitely.
