Brewing your own kombucha at home is one of those deeply satisfying kitchen projects that rewards patience with something genuinely delicious. The process starts with a strong, dark-steeped black tea sweetened with plain white sugar — that sugar feeds the SCOBY over the course of a week or more, gradually transforming the liquid into something tangy, lightly fizzy, and refreshingly complex. Watching the fermentation unfold day by day, tasting for that perfect balance of tartness and mild effervescence, makes the finished product feel like a real achievement. Because the entire ingredient list is plant-based and naturally derived, there's zero concern about hidden seafood-based additives or cross-contact that can sneak into store-bought beverages through shared processing lines. The key to success here is temperature control — keeping the jar in a consistently warm spot and making sure the sweet tea is fully cooled before the SCOBY ever touches it protects the culture and keeps fermentation on track. Once you've bottled your first batch and reserved that starter liquid, you're set up for an ongoing cycle that just keeps getting easier. Cold, crisp, and alive with natural probiotics, this homemade brew is the kind of thing you'll want to keep stocked in the fridge at all times.

Bring 1 quart of the filtered water to a boil in a large pot. Remove from heat, add the tea bags (or loose-leaf tea in a strainer), and steep for 5–7 minutes, until the tea is deep amber and strongly brewed. Remove and discard the tea bags or strainer.
Add the sugar to the hot tea and stir with a long-handled spoon until fully dissolved, about 1 minute.
