Brewing your own kombucha at home is one of the most satisfying fermentation projects you can take on, and this plain version is the perfect starting point. The ingredient list is beautifully minimal ā just filtered water, black tea, sugar, a SCOBY, and a splash of starter liquid ā so there is absolutely nothing hiding in here that doesn't belong. For anyone avoiding industrially processed seed oils, store-bought drinks can be a minefield of unexpected additives, but this recipe sidesteps all of that entirely by relying on simple, whole ingredients and the natural magic of fermentation. The process is mostly hands-off: steep, cool, combine, and wait. Watching a new SCOBY layer form over the course of a week or two is genuinely exciting, and tasting the brew each day as it shifts from sweet to pleasantly tart is one of those small kitchen joys that never gets old. The finished kombucha is lightly effervescent, tangy, and refreshing ā nothing like the overly sweet commercial versions. Best of all, once you have a healthy SCOBY going, you can keep the cycle running indefinitely, always reserving a little starter liquid to kick off the next batch.
