Brewing your own kombucha at home is one of those deeply satisfying kitchen projects that rewards patience with something genuinely delicious. The process is beautifully simple — just tea, sugar, water, a SCOBY, and a little starter liquid — and the result is a lightly fizzy, pleasantly tart drink you can feel good about sipping every day. Because this recipe is entirely plant-based and built from fermented tea, it's naturally free from any animal proteins, making it a completely worry-free choice for anyone managing a red meat sensitivity or allergy. Store-bought kombucha can sometimes raise questions about shared production facilities or unexpected additives, so controlling every ingredient yourself is a real advantage. The fermentation window of seven to fourteen days lets you dial in exactly how tart or mellow you want the final brew, which means you can customize it to your taste rather than settling for whatever's on the shelf. Once you get your first batch going, you'll have a continuous supply of starter liquid and a healthy SCOBY ready to keep the cycle going indefinitely. It's a low-effort, high-reward ritual that turns a handful of pantry staples into something that genuinely feels like a treat.

Bring 1 quart of the filtered water to a boil in a large pot. Remove from heat, add the tea bags (or loose-leaf tea in a strainer), and steep for 5–7 minutes, until the tea is deep amber and strongly brewed. Remove and discard the tea bags or strainer.
Add the sugar to the hot tea and stir with a long-handled spoon until fully dissolved, about 1 minute.
