Brewing your own kombucha at home is one of those deeply satisfying kitchen projects that rewards patience with something genuinely delicious. The process starts with a strong, dark-steeped black tea sweetened with plain white sugar — the SCOBY and starter liquid then go to work over the course of a week or more, slowly transforming that sweet base into a tangy, lightly effervescent drink. Watching the fermentation unfold day by day, tasting as the tartness builds, makes the finished result feel like a real achievement. Store-bought kombucha can come with a long list of added flavors, juices, and botanicals that introduce unnecessary uncertainty for people avoiding specific ingredients, but this recipe keeps things completely stripped back — just tea, sugar, water, and your culture. Temperature control is the real skill here, and the instructions walk you through exactly what range keeps your SCOBY happy and your ferment on track. The finished kombucha is clean, bright, and pleasantly sour, with none of the guesswork that comes with a commercial label. Bottle it up, keep it cold, and you have a steady homemade supply that you know inside and out.

Bring 1 quart of the filtered water to a boil in a large pot. Remove from heat, add the tea bags (or loose-leaf tea in a strainer), and steep for 5–7 minutes, until the tea is deep amber and strongly brewed. Remove and discard the tea bags or strainer.
Add the sugar to the hot tea and stir with a long-handled spoon until fully dissolved, about 1 minute.
