Brewing your own kombucha at home is one of those deeply satisfying kitchen projects that rewards patience with something genuinely delicious. The process starts with a strong, dark steep of black tea, which feeds the SCOBY and gives the finished drink its characteristic depth and mild tang. As the culture works through the sweetened tea over seven to ten days, it transforms the sugar into a lightly effervescent, pleasantly tart beverage that tastes nothing like the flat, overly sweet versions you might have tried before. Tasting daily from day seven lets you dial in exactly how sour or mellow you want it, so every batch can be a little different depending on your mood. Store-bought raw kombucha is entirely plant-based and free of any meat or seafood concerns, making this a naturally easy fit for a pescatarian lifestyle without any ingredient swaps needed. Once you get the hang of the rhythm — brew, ferment, bottle, repeat — you'll always have a live starter ready to go, and the cost per bottle drops dramatically compared to picking one up at the store. It's a genuinely approachable fermentation project that pays off in both flavor and the quiet satisfaction of making something alive from scratch.

Bring 1 quart of the filtered water to a boil in a large pot. Remove from heat, add the tea bags (or loose-leaf tea in a strainer), and steep for 5–7 minutes, until the tea is deep amber and strongly brewed. Remove and discard the tea bags or strainer.
Add the sugar to the hot tea and stir with a long-handled spoon until fully dissolved, about 1 minute.
