Brewing your own kombucha at home is one of those deeply satisfying kitchen projects that rewards patience with something genuinely delicious. The process starts with a strong, dark-steeped black tea sweetened with plain white sugar — the SCOBY and starter liquid then go to work over the course of a week or more, slowly transforming that sweet base into a tangy, lightly effervescent drink with real depth. Watching the fermentation unfold day by day, tasting as the tartness builds, makes the finished result feel like a small triumph. Because this recipe uses nothing but tea, sugar, water, and live culture, it's completely free of the warming spices that sneak into so many store-bought or flavored kombucha blends — no hidden seasonings, just clean fermented goodness. Temperature control is the real skill here: keeping the brew in that sweet spot between 70°F and 78°F protects the SCOBY and ensures a balanced, pleasant ferment rather than something too sharp or flat. Once you've bottled your first batch and reserved your starter liquid, you're set up to keep the cycle going indefinitely, which makes this one of the most cost-effective drinks you can produce at home. Chilled and poured over ice, it's crisp, alive, and entirely your own.

Bring 1 quart of the filtered water to a boil in a large pot. Remove from heat, add the tea bags (or loose-leaf tea in a strainer), and steep for 5–7 minutes, until the tea is deep amber and strongly brewed. Remove and discard the tea bags or strainer.
Add the sugar to the hot tea and stir with a long-handled spoon until fully dissolved, about 1 minute.
