Brewing your own kombucha at home is one of the most satisfying kitchen projects you can take on, and the result is a tangy, lightly effervescent drink that feels genuinely alive. Store-bought versions can be hit or miss when it comes to additives and preservatives, but this recipe keeps things beautifully simple — just tea, sugar, water, a SCOBY, and starter liquid. The fermentation process itself is what does all the heavy lifting, naturally producing that signature tartness without any curing agents or synthetic compounds that can sneak into commercial beverages. Cooling the sweet tea to the right temperature before introducing the SCOBY is the most important step, and the recipe walks you through exactly what to look for so nothing goes wrong. After seven to ten days of patient waiting, you'll taste-test your way to the perfect balance of tart and mild effervescence — or push it a few more days if you love a sharper, more vinegary finish. Bottling in glass with tight lids keeps everything fresh and lets a little natural carbonation build in the fridge. Once you have your first batch done, you'll have a SCOBY and starter liquid ready to go, making every future batch even easier and more rewarding.

Bring 1 quart of the filtered water to a boil in a large pot. Remove from heat, add the tea bags (or loose-leaf tea in a strainer), and steep for 5–7 minutes, until the tea is deep amber and strongly brewed. Remove and discard the tea bags or strainer.
Add the sugar to the hot tea and stir with a long-handled spoon until fully dissolved, about 1 minute.
