Brewing your own kombucha at home is one of the most satisfying kitchen projects you can take on, and this plain version is the perfect foundation. The ingredient list is beautifully simple ā just black tea, sugar, filtered water, a SCOBY, and a splash of starter liquid ā making it naturally free of the peppers, tomatoes, and other nightshades that can sneak into flavored commercial varieties. Store-bought kombuchas often include fruit blends or botanical additions that aren't always clearly labeled, so having full control over what goes into the jar is a genuine relief. The fermentation process does the heavy lifting here: over 7 to 14 days, the SCOBY transforms sweetened tea into a pleasantly tart, lightly fizzy drink that you can sip straight or use as a base for your own safe flavor experiments. Patience is the main skill required ā you're mostly just watching, tasting on day seven, and letting the culture work. Once you've nailed the timing to your preferred tartness level, you'll always have a fresh batch ready to go, along with a thriving SCOBY for the next round.
