Homemade kombucha is one of those projects that feels almost magical — a handful of simple ingredients transform into a tangy, lightly fizzy drink through nothing more than time and a living culture. This version keeps things beautifully stripped back, relying on plain black tea, white sugar, water, and a SCOBY to do all the work. For anyone navigating a sensitivity to warming spices, store-bought kombucha can be a minefield, since many commercial flavors lean heavily on blends that include cinnamon or other spices tucked into the ingredient list. Brewing your own means you control every single thing that goes into the jar. The process is more hands-off than it looks — steep, cool, combine, and then let fermentation do its thing over the course of a week or so, tasting daily until the tartness hits just right. The result is a clean, pleasantly sour kombucha with a gentle effervescence that works beautifully on its own or as a base for your own safe flavor experiments. Once you have a finished batch, you also have your starter liquid and SCOBY ready to go, so the whole cycle just keeps rolling.

Bring 1 quart of the filtered water to a boil in a large pot. Remove from heat, add the tea bags (or loose-leaf tea in a strainer), and steep for 5–7 minutes, until the tea is deep amber and strongly brewed. Remove and discard the tea bags or strainer.
Add the sugar to the hot tea and stir with a long-handled spoon until fully dissolved, about 1 minute.
