Brewing your own kombucha at home is one of those kitchen projects that feels almost magical — a living culture slowly transforming sweet tea into something tangy, fizzy, and genuinely satisfying. This recipe is entirely plant-based in its ingredients, relying on nothing more than black tea, sugar, filtered water, and a SCOBY to do all the heavy lifting. There's no animal protein anywhere in the process, so it's a completely worry-free choice for anyone avoiding meat or poultry in their diet. The fermentation window of seven to ten days gives you real control over the flavor — pull it early for something gently tart and lightly effervescent, or let it ride closer to two weeks if you prefer a sharper, more vinegary bite. One of the best parts of making it yourself is knowing exactly what went into the jar, with no mystery additives or pasteurization stripping away the live cultures. Once you've got your first batch going, you'll have a SCOBY and starter liquid ready to keep the cycle going indefinitely, making this one of the most rewarding and low-cost fermentation habits you can build in your kitchen.

Bring 1 quart of the filtered water to a boil in a large pot. Remove from heat, add the tea bags (or loose-leaf tea in a strainer), and steep for 5–7 minutes, until the tea is deep amber and strongly brewed. Remove and discard the tea bags or strainer.
Add the sugar to the hot tea and stir with a long-handled spoon until fully dissolved, about 1 minute.
