Brewing your own kombucha at home is one of those deeply satisfying kitchen projects that rewards patience with something genuinely delicious — tangy, lightly fizzy, and alive in a way no store-bought bottle quite matches. The process is beautifully simple: strong black tea, dissolved sugar, a SCOBY, and a little starter liquid are all it takes to kick off fermentation. Keeping the sweet tea at the right temperature before adding the SCOBY is the most important step, since too much heat can damage the culture and stall the whole batch. From there, the jar just needs a warm, dark corner and about a week of undisturbed time while the bacteria and yeast do their work. Tasting daily from day seven lets you dial in exactly the level of tartness you want, whether that's gently tart and slightly sweet or boldly sour and vinegary. The whole setup uses nothing but tea, sugar, water, and a live culture — completely free from tree nuts of any kind, so there's no label-scanning or cross-contamination anxiety to worry about. Once you've got your first batch going, you'll always have starter liquid ready for the next one, making this a self-sustaining ritual you'll want to keep going indefinitely.

Bring 1 quart of the filtered water to a boil in a large pot. Remove from heat, add the tea bags (or loose-leaf tea in a strainer), and steep for 5–7 minutes, until the tea is deep amber and strongly brewed. Remove and discard the tea bags or strainer.
Add the sugar to the hot tea and stir with a long-handled spoon until fully dissolved, about 1 minute.
