Brewing your own kombucha at home is one of those deeply satisfying kitchen projects that rewards patience with something genuinely delicious. The process is beautifully simple — just tea, sugar, water, and a living SCOBY working together over the course of a week or two to create a tangy, lightly effervescent drink that you can customize to your exact taste. Because the only flavoring here is plain black tea, this batch is completely free of any spice additions, making it a clean, pure ferment with nothing unexpected hiding in the bottle. Store-bought kombucha can be a gamble when you're avoiding certain ingredients, since flavored varieties often sneak in spice blends or botanical infusions that aren't always obvious on the label. Making it yourself means you control every single ingredient from start to finish. The fermentation window is flexible too — taste it on day seven for something mellow and lightly tart, or let it ride a few extra days if you prefer a bolder, more vinegary bite. Once you've got your first batch going, you'll always have starter liquid and a healthy SCOBY ready for the next round, so the process just keeps getting easier.

Bring 1 quart of the filtered water to a boil in a large pot. Remove from heat, add the tea bags (or loose-leaf tea in a strainer), and steep for 5–7 minutes, until the tea is deep amber and strongly brewed. Remove and discard the tea bags or strainer.
Add the sugar to the hot tea and stir with a long-handled spoon until fully dissolved, about 1 minute.
