Brewing your own kombucha from scratch is one of the most satisfying fermentation projects you can take on at home, and this stripped-down version keeps things beautifully simple. Store-bought kombucha is often loaded with added fruit juices, natural flavor extracts, and other ingredients that can be hard to verify — making a plain batch at home the cleanest way to enjoy the real thing. The process relies on just four honest ingredients: filtered water, black tea, white sugar, and a live SCOBY with its starter liquid. The sugar feeds the culture during fermentation and is largely consumed by the time your brew is ready, leaving behind that signature tangy, lightly effervescent drink. Patience is the real skill here — tasting daily from day seven lets you pull the batch exactly when the tartness hits your sweet spot, whether you prefer something mild and slightly sweet or sharp and vinegary. Because nothing artificial ever enters the jar, what you get is pure, raw kombucha with a clean flavor profile and a living culture you can keep going indefinitely. Once you have your SCOBY and a rhythm going, each new batch costs almost nothing and takes just minutes of hands-on time.

Bring 1 quart of the filtered water to a boil in a large pot. Remove from heat, add the tea bags (or loose-leaf tea in a strainer), and steep for 5–7 minutes, until the tea is deep amber and strongly brewed. Remove and discard the tea bags or strainer.
Add the sugar to the hot tea and stir with a long-handled spoon until fully dissolved, about 1 minute.
