Brewing your own kombucha at home is one of those deeply satisfying kitchen projects that rewards patience with something genuinely delicious. The process starts with a strong, dark cup of sweetened black tea, which the SCOBY slowly transforms over a week or more into a tangy, lightly fizzy drink that tastes nothing like anything you can easily replicate from a bottle. Watching the fermentation unfold day by day — and tasting as you go — makes the final pour feel like a real achievement. Store-bought kombucha can sometimes include flavoring blends or additives that introduce unexpected ingredients, so making it from scratch with just tea, sugar, water, and a live culture gives you complete control over what goes into every sip. The starter liquid is key here, jumpstarting fermentation and keeping the environment acidic enough for the SCOBY to thrive safely. You can dial the flavor to your exact preference: pull it early for something gently tart and slightly sweet, or let it ride a few extra days for a sharper, more vinegary bite. Once you have a healthy SCOBY going, each finished batch sets you up for the next, making this a self-sustaining ritual that gets easier and more rewarding every time.

Bring 1 quart of the filtered water to a boil in a large pot. Remove from heat, add the tea bags (or loose-leaf tea in a strainer), and steep for 5–7 minutes, until the tea is deep amber and strongly brewed. Remove and discard the tea bags or strainer.
Add the sugar to the hot tea and stir with a long-handled spoon until fully dissolved, about 1 minute.
