Flaky, golden, and fragrant with cardamom and orange blossom water, this pistachio baklava is the kind of showstopper that looks like it came from a specialty bakery — but comes together in your own kitchen with ingredients you can fully control. That control matters more than it might seem, because store-bought baklava and many commercial syrups rely on corn syrup or glucose syrup as a cheap sweetener and texture shortcut. Here, the syrup is built entirely from honey, granulated sugar, and water, simmered down to a glossy, lightly thickened consistency that soaks into every crisp layer without any unwanted additives. The filling is just coarsely chopped raw pistachios seasoned with cinnamon and cardamom — nothing processed, nothing hidden. Pouring the cooled syrup over the hot baklava straight from the oven creates that signature shatter-and-chew texture that makes this dessert so irresistible. A two-hour rest lets everything set up beautifully, and a final scatter of chopped pistachios makes it look as impressive as it tastes. Whether you're cutting it into diamonds for a dinner party or sneaking a square straight from the pan, this is a recipe worth keeping.

Make the syrup first so it has time to cool completely before the baklava comes out of the oven. Combine the honey, water, 1/2 cup sugar, and lemon peel strip in a small saucepan over medium heat, stirring until the sugar dissolves. Bring to a gentle boil, then reduce heat and simmer for 10 minutes, until slightly thickened and the syrup coats the back of a spoon. Remove from heat, stir in the orange blossom water, and discard the lemon peel. Set aside to cool to room temperature.
Pulse the pistachios in a food processor until coarsely chopped — pieces should be roughly the size of a small pea, not a fine powder. Transfer to a bowl and stir in the 2 tbsp sugar, cinnamon, and cardamom until evenly combined.
