Baklava is one of those desserts that looks impossibly impressive but rewards patience more than skill, and this pistachio version is a perfect example. Layers of buttery, shatteringly crisp phyllo are stacked around a fragrant filling of coarsely chopped pistachios, warm cinnamon, and a hint of cardamom — no ginger anywhere in sight, which makes it a genuinely safe pick for anyone navigating that particular sensitivity. The honey syrup is where the magic really happens: a slow simmer with lemon peel and a splash of orange blossom water gives it a floral, citrus-kissed depth that soaks into every golden layer. Pouring that cooled syrup over the hot pan straight from the oven creates the signature crackle and chew that makes baklava so addictive. The diamond-cut pieces look bakery-worthy, and a final scatter of chopped pistachios on top makes the whole tray feel like something you'd find behind a glass case at a specialty shop. It does take a little time to layer and rest properly, but none of the steps are difficult — just methodical. The result is a rich, nutty, honey-drenched treat that's genuinely hard to stop eating.

Make the syrup first so it has time to cool completely before the baklava comes out of the oven. Combine the honey, water, 1/2 cup sugar, and lemon peel strip in a small saucepan over medium heat, stirring until the sugar dissolves. Bring to a gentle boil, then reduce heat and simmer for 10 minutes, until slightly thickened and the syrup coats the back of a spoon. Remove from heat, stir in the orange blossom water, and discard the lemon peel. Set aside to cool to room temperature.
Pulse the pistachios in a food processor until coarsely chopped — pieces should be roughly the size of a small pea, not a fine powder. Transfer to a bowl and stir in the 2 tbsp sugar, cinnamon, and cardamom until evenly combined.
