Few desserts hit the way a tray of freshly made baklava does — shatteringly crisp layers of phyllo, a fragrant pistachio filling spiced with cinnamon and cardamom, and a honey syrup perfumed with orange blossom water and lemon peel. The ingredient list here is refreshingly straightforward: real butter, raw pistachios, honey, and spices, with absolutely nothing in the mix that functions as an emulsifier or stabilizer. That matters more than you might think, because store-bought versions and many bakery trays rely on processed syrups or margarine-based fats that can sneak in unwanted additives. Here, the syrup is made from scratch on the stovetop — just honey, water, sugar, and aromatics — so you know exactly what's going in. The technique of pouring cool syrup over hot baklava is the real secret to that iconic crisp-yet-sticky texture, and it's one of those kitchen moments that feels almost magical when you hear the sizzle. Letting it rest for a full two hours before serving is the hardest part, but it's what allows every layer to absorb the syrup and set into clean, gorgeous pieces. Finish with a scatter of finely chopped pistachios and you've got a showstopper that's as clean-ingredient as it is impressive.

Make the syrup first so it has time to cool completely before the baklava comes out of the oven. Combine the honey, water, 1/2 cup sugar, and lemon peel strip in a small saucepan over medium heat, stirring until the sugar dissolves. Bring to a gentle boil, then reduce heat and simmer for 10 minutes, until slightly thickened and the syrup coats the back of a spoon. Remove from heat, stir in the orange blossom water, and discard the lemon peel. Set aside to cool to room temperature.
Pulse the pistachios in a food processor until coarsely chopped — pieces should be roughly the size of a small pea, not a fine powder. Transfer to a bowl and stir in the 2 tbsp sugar, cinnamon, and cardamom until evenly combined.
