Flaky, golden, and drenched in fragrant honey syrup, this pistachio baklava is the kind of showstopper dessert that looks like it came from a specialty bakery. The filling is a warmly spiced blend of coarsely chopped raw pistachios, cinnamon, and cardamom — earthy, aromatic, and just sweet enough to let the nuts shine. Many classic pastries and baked goods rely on eggs for structure, but baklava gets everything it needs from layers of buttered phyllo and a perfectly timed syrup pour, making it naturally egg-free without any substitutions required. The technique here is straightforward: build the layers, cut before baking, and let the contrast of hot pastry and cool syrup do the work — that sizzle is the sound of crispy, lacquered perfection happening in real time. Orange blossom water and a strip of lemon peel give the syrup a delicate floral lift that elevates the whole thing beyond ordinary sweetness. A long rest at room temperature lets every piece soak up the syrup fully, so you end up with baklava that's crisp on top, tender in the middle, and deeply satisfying all the way through. Finish with a scatter of finely chopped pistachios and you have a dessert worthy of any celebration.

Make the syrup first so it has time to cool completely before the baklava comes out of the oven. Combine the honey, water, 1/2 cup sugar, and lemon peel strip in a small saucepan over medium heat, stirring until the sugar dissolves. Bring to a gentle boil, then reduce heat and simmer for 10 minutes, until slightly thickened and the syrup coats the back of a spoon. Remove from heat, stir in the orange blossom water, and discard the lemon peel. Set aside to cool to room temperature.
Pulse the pistachios in a food processor until coarsely chopped — pieces should be roughly the size of a small pea, not a fine powder. Transfer to a bowl and stir in the 2 tbsp sugar, cinnamon, and cardamom until evenly combined.
