Tropical, bright, and just a little spicy, this iced tea is the kind of drink that makes you feel like you're somewhere warm even if you're just standing in your own kitchen. Fresh ginger is simmered directly in the water before the tea bags go in, so every sip carries that warming, slightly fiery depth without any artificial flavoring. Maple syrup sweetens things up naturally, and a squeeze of lime ties the whole thing together with a citrusy lift that keeps it from tasting too sweet. The real star is the fresh pineapple juice β pressed from actual fruit and stirred in after steeping β which gives the drink a juicy, sun-ripened flavor you simply can't get from a bottle. Since every ingredient here is a whole food or pantry staple, there's no need to scan labels for hidden nut-based additives or worry about cross-contact from flavored syrups and pre-made mixes. It's refreshing enough to serve at a backyard gathering but easy enough to make on a random Tuesday afternoon when you just want something better than plain iced tea.

Combine the water and sliced ginger in a medium saucepan over medium-high heat and bring to a boil. Remove from the heat, add the tea bags, and steep for 5 minutes, until the tea is deep amber and fragrant.
Remove and discard the tea bags. Stir in the maple syrup until fully dissolved. Let the ginger continue to steep in the hot tea for another 5 minutes, then strain through a fine-mesh strainer into a pitcher, pressing the ginger slices to extract their flavor; discard the solids.
