This iced tea is the kind of drink that makes you feel like you're sitting somewhere tropical, even if you're just in your kitchen on a Tuesday. Fresh pineapple juice, real ginger, and a splash of lime come together with black tea for something bright, layered, and genuinely refreshing. Every ingredient here is exactly what it says it is — no dyes, no artificial flavors, no mystery syrups — just whole, recognizable things you can see and smell before they go into the pitcher. The ginger gets a double steep, first in boiling water and then again as the tea cools, which coaxes out a warm, slightly spicy depth that plays beautifully against the sweet pineapple. Maple syrup does the sweetening work cleanly, and you can dial it up or back depending on how sweet your pineapple is running that day. Poured over ice with a wedge of fresh pineapple on the rim, it looks like something you'd pay too much for at a café — except you made it yourself, and you know exactly what's in it.

Combine the water and sliced ginger in a medium saucepan over medium-high heat and bring to a boil. Remove from the heat, add the tea bags, and steep for 5 minutes, until the tea is deep amber and fragrant.
Remove and discard the tea bags. Stir in the maple syrup until fully dissolved. Let the ginger continue to steep in the hot tea for another 5 minutes, then strain through a fine-mesh strainer into a pitcher, pressing the ginger slices to extract their flavor; discard the solids.
