Bright, tangy, and alive with tropical warmth, this fermented tea is the kind of drink that makes you feel genuinely good about what you're sipping. Fresh pineapple juice and sliced ginger go into the second ferment, building a naturally fizzy, fruit-forward brew that tastes far more complex than the short ingredient list suggests. Every ingredient here β from the raw honey to the black tea to the fresh fruit β is completely free of refined seed oils, which can sneak into flavored store-bought kombuchas through added ingredients or processing aids. Making it at home means you control exactly what goes in, and nothing else does. The two-stage fermentation process sounds involved, but it's mostly just waiting: the SCOBY and starter liquid do the heavy lifting while you go about your week. That slow, patient ferment is also what gives this kombucha its depth β pleasantly tart, lightly effervescent, and finished with a gingery kick that lingers in the best way. Pour it over ice on a warm afternoon and it genuinely rivals anything you'd find at a specialty shop.

Bring 8 cups of filtered water to a boil in a large saucepan. Remove from heat, add the tea bags, and steep for 7β10 minutes until the tea is deep amber. Remove and discard the tea bags.
Add the honey to the hot tea and stir until fully dissolved. Allow the sweet tea to cool completely to room temperature, about 1β2 hours β the liquid must be below 80Β°F (27Β°C) before the SCOBY is added, or the heat will damage the culture.
