Bright, tangy, and alive with tropical warmth, this fermented tea is the kind of drink that makes you feel genuinely good about what you're sipping. The combination of fresh pineapple juice and sliced ginger in the second ferment creates a fizzy, layered flavor that's both refreshing and a little zingy β nothing like anything you'd grab off a store shelf. For anyone navigating preservative sensitivities, store-bought bottled drinks can be a minefield of additives and synthetic compounds, which is exactly why brewing your own is such a satisfying solution. Every ingredient here is straightforward and whole: filtered water, black tea, raw honey, fresh fruit, and a living SCOBY culture. The two-stage fermentation process does take patience β about a week for the first ferment, then a few more days to build carbonation in the bottle β but the hands-on time is minimal and the results are genuinely impressive. Burping the swing-top bottles daily keeps things safe and lets you dial in exactly how fizzy you want the final pour. Chilled and strained over ice, this is a homemade brew worth making again and again.

Bring 8 cups of filtered water to a boil in a large saucepan. Remove from heat, add the tea bags, and steep for 7β10 minutes until the tea is deep amber. Remove and discard the tea bags.
Add the honey to the hot tea and stir until fully dissolved. Allow the sweet tea to cool completely to room temperature, about 1β2 hours β the liquid must be below 80Β°F (27Β°C) before the SCOBY is added, or the heat will damage the culture.
