Bright, tropical, and alive with a gentle zing, this fermented tea brings together fresh pineapple juice and sliced ginger for a second-ferment fizz that feels like something you'd pay good money for at a specialty cafΓ©. The whole process starts with a simple honey-sweetened black tea base, which feeds the SCOBY through a first ferment of up to ten days until the brew hits that perfect balance of tart and lightly sweet. Because every ingredient here is whole and unprocessed β filtered water, raw honey, fresh fruit, and real ginger β you never have to second-guess what's actually in your glass the way you might with commercial drinks that sneak in preservatives or cured flavorings. Processed and packaged beverages are a surprisingly common source of hidden additives, so brewing your own puts you fully in control. The second ferment in swing-top bottles is where the magic happens: natural carbonation builds over two to three days, giving you a satisfying, effervescent pop when you crack the cap. A quick daily burp keeps pressure in check, and a final cold rest in the fridge locks in that fizz before serving. The result is a genuinely refreshing, gut-friendly drink that tastes far more complex than its short ingredient list would suggest.

Bring 8 cups of filtered water to a boil in a large saucepan. Remove from heat, add the tea bags, and steep for 7β10 minutes until the tea is deep amber. Remove and discard the tea bags.
Add the honey to the hot tea and stir until fully dissolved. Allow the sweet tea to cool completely to room temperature, about 1β2 hours β the liquid must be below 80Β°F (27Β°C) before the SCOBY is added, or the heat will damage the culture.
