Bright, tropical, and alive with a gentle kick of ginger, this fermented tea is the kind of drink that makes you feel like you're doing something genuinely good for yourself β because you are. Homemade kombucha is a natural fit for anyone avoiding emulsifiers, since the whole process relies on nothing more than tea, honey, a live culture, and real fruit. So many bottled kombuchas and flavored drinks sneak in additives to stabilize texture or extend shelf life, but here every ingredient is exactly what it says it is. The first ferment builds that signature tangy depth over seven to ten days, and the second ferment with fresh pineapple juice and sliced ginger adds fizz and flavor the old-fashioned way β no shortcuts, no stabilizers. Raw honey sweetens the tea base beautifully and plays well with the natural acidity that develops as the SCOBY does its work. The result is a lightly effervescent, golden brew with a sweet-tart pineapple front and a warm ginger finish that lingers just long enough. Once you have your SCOBY going, each new batch gets easier, and you'll always know exactly what's in your glass.

Bring 8 cups of filtered water to a boil in a large saucepan. Remove from heat, add the tea bags, and steep for 7β10 minutes until the tea is deep amber. Remove and discard the tea bags.
Add the honey to the hot tea and stir until fully dissolved. Allow the sweet tea to cool completely to room temperature, about 1β2 hours β the liquid must be below 80Β°F (27Β°C) before the SCOBY is added, or the heat will damage the culture.
