Bright, tropical, and alive with a gentle kick of ginger, this homemade fermented tea is the kind of drink that makes you feel genuinely good about what you're sipping. Store-bought kombucha can be a minefield for anyone avoiding carrageenan, since many commercial brands use it as a stabilizer or include flavored add-ins that sneak it in β brewing your own completely sidesteps that problem. The base is nothing more than filtered water, black tea, raw honey, and a live SCOBY, so you know exactly what's going into every bottle. Fresh pineapple juice and real sliced ginger handle all the flavoring in the second ferment, giving you that fizzy, fruity complexity without any additives or thickeners whatsoever. The process does take patience β about a week for the first ferment, then a few more days to build carbonation β but the hands-on time is minimal and the results are genuinely impressive. Each swing-top bottle comes out naturally effervescent, tangy, and just sweet enough, with a warm ginger finish that lingers in the best way. Once you have your SCOBY going, you can keep the cycle running indefinitely, which makes this one of the most rewarding things you can brew at home.

Bring 8 cups of filtered water to a boil in a large saucepan. Remove from heat, add the tea bags, and steep for 7β10 minutes until the tea is deep amber. Remove and discard the tea bags.
Add the honey to the hot tea and stir until fully dissolved. Allow the sweet tea to cool completely to room temperature, about 1β2 hours β the liquid must be below 80Β°F (27Β°C) before the SCOBY is added, or the heat will damage the culture.
