Bright, tropical, and alive with a gentle zing, this fermented tea brings together the sunny sweetness of fresh pineapple and the warm bite of real ginger in a naturally effervescent drink you'll want to keep on rotation. Store-bought kombucha and flavored sparkling drinks are notorious for sneaking in synthetic preservatives like BHA and BHT, so brewing your own from scratch is one of the cleanest ways to enjoy a probiotic fizz without second-guessing the label. Every ingredient here is whole and straightforward β filtered water, black tea, raw honey, fresh pineapple juice, and sliced ginger β so you know exactly what's going into every bottle. The two-stage fermentation process does the heavy lifting: the first ferment builds that signature tartness, and the second ferment, sealed with the fruit and ginger, creates the carbonation naturally. Raw honey feeds the SCOBY beautifully and adds a subtle floral depth that refined sugar simply can't match. The result is a lightly fizzy, golden-hued drink with layers of flavor that taste far more complex than the ingredient list suggests. Pour it over ice, strain out the ginger if you like, and enjoy something genuinely homemade.

Bring 8 cups of filtered water to a boil in a large saucepan. Remove from heat, add the tea bags, and steep for 7β10 minutes until the tea is deep amber. Remove and discard the tea bags.
Add the honey to the hot tea and stir until fully dissolved. Allow the sweet tea to cool completely to room temperature, about 1β2 hours β the liquid must be below 80Β°F (27Β°C) before the SCOBY is added, or the heat will damage the culture.
