Bright, tropical, and alive with a gentle kick of ginger, this homemade fermented tea is the kind of drink that makes you feel genuinely good about what you're sipping. Store-bought kombucha can be a minefield of added juices, "natural flavors," and synthetic colorants that sneak in under vague labeling β brewing your own puts you completely in control. Every ingredient here is straightforward and real: filtered water, black tea, raw honey, fresh pineapple juice pressed from actual fruit, and sliced ginger root. There are no dyes, no artificial enhancers, and nothing that requires a magnifying glass to decode on a label. The two-stage fermentation process does take some patience β about a week for the first ferment and a few more days to build carbonation in the bottle β but the hands-on time is minimal and the results are genuinely impressive. You end up with a fizzy, golden brew that's tangy from fermentation, sweet from the pineapple, and warmly spiced from the ginger. It's the kind of thing you'll want to keep a continuous batch of going once you taste how good homemade can be.
