Bright, tropical, and alive with a zippy ginger kick, this fermented tea is the kind of drink that makes you feel genuinely good about what you're sipping. Every ingredient here is exactly what it says it is β fresh pineapple, real ginger, raw honey, and black tea β so there's none of the mystery that comes with store-bought bottles listing "natural flavors" on the label. That single phrase can hide a surprising amount of synthetic chemistry, which is why brewing your own is such a satisfying workaround. The two-stage fermentation process does the heavy lifting: the first ferment builds that signature tangy depth, and the second ferment in sealed swing-top bottles creates the fizz using nothing but fruit juice and time. Fresh pineapple juice brings a mellow sweetness that balances the tartness beautifully, while the sliced ginger adds warmth without any extract or flavoring shortcut. It takes patience β plan for up to two weeks from start to finish β but most of that time is completely hands-off. The result is a bubbly, complex brew that tastes like something from a boutique fermentation shop, made entirely on your own terms.

Add the honey to the hot tea and stir until fully dissolved. Allow the sweet tea to cool completely to room temperature, about 1β2 hours β the liquid must be below 80Β°F (27Β°C) before the SCOBY is added, or the heat will damage the culture.
