Pat the pork shoulder chunks dry and season all over with 1 tsp kosher salt and 1/2 tsp black pepper. Heat 1 tbsp vegetable oil in a large Dutch oven over medium-high heat until shimmering. Working in batches to avoid crowding, sear the pork for 3–4 minutes per side until deeply browned on at least two sides, then transfer to a plate.
Reduce the heat to medium. Add the onion to the pot and cook, stirring occasionally, until softened and translucent, about 4–5 minutes. Add the 4 smashed garlic cloves, 1 tsp cumin, and 1 tsp oregano and cook, stirring, until fragrant, about 1 minute.
