Preheat the oven to 400°F (205°C). Lightly grease a 9×13-inch baking dish with a small amount of neutral oil and set aside.
Make the enchilada sauce: Heat 1 tbsp of the neutral oil in a medium saucepan over medium heat until shimmering. Add the garlic and cook, stirring, until fragrant and just golden at the edges, about 1 minute. Add the tomato paste, ancho chili powder, cumin, and smoked paprika and stir constantly for 1 minute, until the paste darkens slightly and smells toasty. Pour in the crushed tomatoes and vegetable broth, stir to combine, and bring to a simmer. Cook uncovered for 10 minutes, until the sauce thickens slightly and coats the back of a spoon. Season with 1/2 tsp salt and remove from heat.
