Combine the rinsed lentils, 2 1/2 cups water, and 1/2 tsp salt in a medium saucepan and bring to a boil over high heat. Reduce the heat to low, cover, and simmer for 20–25 minutes, until the lentils are tender but still hold their shape and the water is absorbed. Remove from heat and set aside.
While the lentils cook, make the pickled jalapeños. Combine the white wine vinegar, 1/2 cup water, sugar, and 1 tsp salt in a small saucepan over medium heat, stirring until the sugar and salt dissolve, about 2 minutes. Place the sliced jalapeños and smashed garlic in a heatproof bowl or jar, pour the hot brine over them, and let sit at room temperature for at least 20 minutes, until slightly softened and tangy.
