This vibrant, creamy dip is the kind of snack that feels indulgent but is quietly doing a lot of good work. Red lentils bring a hearty base packed with plant-based protein and iron — two nutrients that matter a lot when your body is working overtime to produce milk. Walnuts add healthy omega-3 fatty acids, and the bright, herby pesto made from fresh basil, garlic, and lemon juice makes the whole thing taste like something you'd order at a restaurant. The golden warmth of turmeric rounds out the flavor while adding a subtle anti-inflammatory boost. Paired with crisp carrots, celery, cucumber, and red bell pepper, you get a full spread of colorful veggies that make snacking feel genuinely satisfying rather than like an afterthought. It comes together in one saucepan and a food processor, which means less cleanup on days when your energy is already stretched thin. Make a batch at the start of the week and keep it in the fridge for easy, nourishing snacking whenever hunger hits.

Combine the rinsed red lentils, water, turmeric, and 1/2 tsp salt in a medium saucepan over medium-high heat. Bring to a boil, then reduce the heat to medium-low and simmer, uncovered, until the lentils are completely soft and have absorbed most of the water, about 15–18 minutes. Remove from heat and let cool for 10 minutes.
While the lentils cool, add the walnuts, basil, garlic, olive oil, lemon juice, black pepper, and red pepper flakes (if using) to a food processor. Pulse 8–10 times until the mixture is finely chopped and cohesive but not completely smooth — it should look like a rough, thick pesto.
